Nose: On the nose, you’ll find sweet, grassy undertones layered with rich, jammy fruit and a bright touch of orange zest, all gently lifted by a soft hint of cardamom spice.

Palate: An aromatic, herbaceous bouquet opens with vibrant notes of wild rocket, fresh ginger, and clover. On the palate, a bright citrus and juniper-rich core takes centre stage, balanced by the natural sweetness of rosehip and layered with depth and complexity. Delicate floral tones and cardamom weave through warming spice, leading to a smooth, lingering finish that’s both refined and full of character.

Finish: Smooth, rounded full bodied, with a lovely citrus note at the back of the mouth.

Garnish with orange peel.

Perfect Serve I 50ml Great Bustard Gin, Fevertree Tonic, ice and garnished with either orange or rosemary, zest the rim.

Short Serve I Martini on the rocks  I  50ml Flight Strength Gin, 25ml Dry Vermouth, Orange Bitters. Ice. Stir. Add Olive.

Long Serve I French 75 (Vermeire 1922)  I  40ml Great Bustard Gin, 20ml Calvados, Squeeze of lemon juice, top up with bubbles.

Classic Serve I Vesper Martini  I  60ml Great Bustard Flight Gin, 20ml Downton Chardonnay Vodka, 10ml Lillet Blanc. Ice. Stir.

Alfalfa, also called lucerne, is a perennial flowering plant. It is cultivated as an important forage crop in many countries around the world. The plant superficially resembles clover (a cousin in the same family), especially while young. It has been cultivated since the era of the ancient Greeks and Romans. It is often found in food shops as young sprouts as it is nutritious and high in protein.

Wild rosehips bring a uniquely vibrant and subtly sweet flavour to spirits, especially gin, where their tart, slightly floral notes complement the traditional botanical blend. Often foraged in late autumn, rosehips add a delicate fruitiness and a hint of citrus, reminiscent of cranberries or hibiscus, that balances the earthiness of juniper.

When infused into gin, they not only enhance the spirit’s complexity but also lend a soft warmth and natural depth, making the final drink feel both refreshing and rounded. This natural ingredient ties the spirit to the landscape, evoking hedgerow walks and the crisp scent of wild gardens.
