One recent collaboration began with a creative brief from James May. Rather than following established gin trends, the project challenged us to explore a largely overlooked area of flavour. Working closely with the brief, founder and distiller Hugh Anderson developed a recipe built around botanicals rich in natural umami character. While citrus, floral and juniper-led spirits dominate the category, savoury and umami flavours remain largely unexplored despite their ability to create depth, complexity and exceptional length on the palate.

This approach reflects how we work. We do not start with what already exists. We start with the story, the landscape, the people and the purpose behind a product. From there we build flavours, source ingredients, develop recipes and create spirits with genuine character and provenance. Whether creating products from locally grown botanicals, vineyard by-products, surplus orchard fruit or entirely new flavour concepts, our focus is always on originality, authenticity and quality.

We love a challenge. Many of our most successful spirits started with
an unusual idea, a local ingredient or a question of "what if?"

If you are looking to create your own spirit for a bar, restaurant, hotel,
pub, shop or private label, we can help bring that vision to life. The process begins with a conversation. We take the time to understand your
concept, your customers and the story you want your spirit to tell.

From there, the creative work begins. Together we explore flavours,
ingredients, provenance and character, translating your ideas into a
botanical blueprint. Every ingredient is selected with purpose, helping
shape a spirit that reflects your brand and resonates with the people
who will enjoy it.

There are no right or wrong answers. Some
clients arrive with a detailed brief. Others simply know how they want
people to feel when they raise a glass. Our role is to guide the
process, challenge assumptions and create something distinctive,
memorable and authentic.

TIMELINES

Every project is different. Some clients arrive with a clear vision and proven recipe, while others begin with little more than an idea. As a guide, developing, refining and producing a bespoke spirit typically takes between four and twelve weeks. Factors such as recipe complexity, packaging lead times, label design and production volumes can all influence the timeline.

Turning Ideas into Spirits

Over the downs lies the small village of Swallowcliffe, whose history dates to 940 AD. In 1852 The Royal Oak opened its doors, before being partly sold to James May in 2021. Wanting to understand how spirits could be made for the pub, James gave us a challenge to create a gin using Parsnips, the rest is history.

The Original Asian Parsnip JM01 was distilled and made at the distillery, as are the distiller cuts.
