It is back! 

This was our first liqueur using hand picked green walnuts from the three beautiful walnut trees growing behind the distillery and a young tree in our small botanical garden. Walnuts have been used in spirits for many years, but the Italians are famous for their Nocino.

This Nocino infusion offers a deeply complex and aromatic flavor profile, balancing rich earthiness with warming spice and subtle sweetness. The bold bitterness of black walnuts is complemented by the roasted depth of coffee beans, creating a dark, almost chocolate-like richness.

Bright citrus notes from orange peel cut through the intensity, adding a refreshing contrast, while maple syrup provides a light caramel-like sweetness that rounds out the bitterness, alongside Madagascan vanilla. The addition of cardamom introduces a warm, slightly spicy and herbal undertone, enhancing the liqueur’s depth.

The result is a velvety, well-balanced spirit with layers of nutty bitterness, warm spice, and gentle sweetness.

Nose: On the nose it releases aromas of vanilla, coffee, maple and walnut with a touch of cinnamon.

Palate: Soft and silky on the palate, this spirit opens with rich maple and walnut notes, gently unfolding into hints of light coffee. As it lingers, warming spices of cardamom and cinnamon emerge, adding depth and complexity to a beautifully balanced finish.

Finish: Smooth, rounded full bodied, with a luxurious texture.

• Each release is made using surplus or specially selected fruit grown in partnership with nearby growers and orchards, supporting local agriculture while reducing waste.

• These eau de vies and spirits are distilled to capture the true character of the fruit at its peak.
• Limited in quantity and rooted in place, Orchard Spirits tell a story of community, seasonality, and the rich flavours of the land.

While not certified organic, our walnuts are hand-picked at the distillery each year while still green and bursting with flavour. The trees are left completely untreated, meaning no pesticides. Just pure, untamed nature. With yields that vary wildly from season to season, each harvest reflects the rhythm of the land and carries a distinct coastal character.

• The small 50ml bottles are deemed as small parcels by Royal Mail.
• All deliveries are sent by signed post, whilst courier will be tracked.
• Deliveries will not be made to minors and delivery services will not complete delivery if they are unsure of the persons age.
• We are unable to leave a package (even in a ‘safe place’) without a signature.
• We offer a collection option from Regent Tailoring in Salisbury for
  Explorer's Gin only. This is shown when selecting your postage.
