When Great Bustard Autumnal Gin was first created, the intention was simple. Capture the flavour of the local harvest and the changing seasons in a bottle. Fresh apple juice from Cranborne Chase, baked quince and carefully selected warming spices came together to create a gin that reflected the countryside around us as autumn arrived.
What we did not expect was how well those flavours would work in a summer serve.
While many summer drinks focus on bright citrus and sweetness, Great Bustard Autumnal Gin brings something different. The fresh apple juice adds natural orchard fruit character. The quince contributes gentle richness and floral notes. Cubeb, cardamom, ginger and other spices add depth without overwhelming the drink. The result is refreshing, balanced and full of flavour.
Served long over ice with lemonade and ginger ale, it becomes a countryside interpretation of one of Britain's most famous summer drinks. It is easy to make, perfect for garden parties, outdoor events and long afternoons with friends, while offering a stronger sense of provenance than many traditional serves.
The inspiration naturally links back to the origins of Pimm's.
Created by James Pimm in London during the 1840s, Pimm's No.1 Cup began life as a gin-based tonic served in his oyster bar near the City of London. Infused with herbs, fruit and spices, it was originally intended as a digestive. Over the following decades it became woven into British summer culture, finding its place at garden parties, cricket matches, regattas and tennis tournaments. Today it remains one of the country's most recognisable summer drinks.
Our version follows the same spirit of sociability but celebrates the harvest of the British countryside. It combines local ingredients, seasonal flavour and a connection to the landscape that inspired its creation.

Recipe
- 50ml Great Bustard Autumnal Gin
- 75ml Lemonade
- 75ml Ginger Ale or Ginger Beer
- Plenty of Ice
Method
- Fill a glass with ice.
- Add the gin, lemonade and ginger ale.
- Stir gently until combined.
- Garnish with sliced apple, orange, strawberries, cucumber or other seasonal fruit. Finish with a generous sprig of fresh mint.
Simple to make, easy to share and packed with flavour, it is a summer drink that celebrates both the season and the landscape from which it came.
