The Sgroppino is a classic Venetian cocktail with origins dating back to the 16th century. Traditionally served between courses, it was designed as a palate cleanser, refreshing the senses and preparing diners for the next dish. The original recipe typically combines sorbet, sparkling wine and vodka, creating a light, frothy and wonderfully refreshing drink.
We first encountered a Sgroppino at the end of a memorable dinner in Cortina d'Ampezzo, nestled high in the Italian Dolomites. Rather than using lemon sorbet, the restaurant served their version with lemon ice cream, creating a richer and creamier interpretation of the classic. It was the perfect way to finish a meal and immediately sparked our curiosity.
Back home, we began experimenting with different combinations, comparing sorbet against ice cream and exploring how various spirits influenced the final drink. While both versions proved delicious, we found ourselves drawn towards a more botanical approach.
By replacing vodka with gin, the cocktail gains an entirely new dimension. The bright citrus character of the lemon remains centre stage, while the botanicals add freshness, complexity and depth. The result is still light and refreshing but with greater character and flavour.
Served ice cold, the Sgroppino sits somewhere between a cocktail and a dessert. It is elegant, uplifting and perfect for warm afternoons, summer entertaining or as a refreshing finale to a meal. After much experimentation, the recipe below has become our favourite version, bringing together Italian tradition and the botanical character of a well-crafted gin.
Glass Type: Champagne Flute
Garnish: Mint leaves or dehydrated lemon.
Taste: Refreshing with a swagger of zing!
Recipe:
- 30ml Explorer’s Gin.
- 100ml Prosecco / Cava / Champagne.
- 1 large scoop of lemon sorbet.
- 2 mint leaves to garnish.
Method:
- Place all the ingredients in a chilled bowl and whisk until smooth (can blend).
- Serve in a chilled flute.
- Garnish with mint.
- Serve immediately.
Notes:
- You can add mint into the ingredients to make a lemon & mint version.
- Grapefruit Sorbet works just as well.
