Bicycle Thief Cocktail

BICYCLE THIEF

Originally on the menu at Dutch Kills, Long Island City, New York. It was created by Zachary Gelnaw-Rubin and Abraham Hawkins, quickly becoming a hit.

The Bicycle Thief is a refreshing, bittersweet drink that combines gin, Campari, fresh grapefruit juice, lemon juice, and simple syrup in a highball glass, topped with club soda.

Equal parts gin and Campari are used in the Bicycle Thief, while other ingredients work to accentuate their flavours. Increase the amount grapefruit juice to soften the intensely and lengthen the drink while bringing out Campari’s grapefruit notes. A balance of lemon juice and simple syrup adds brightness and complexity. A dash of soda to top the drink lends effervescence and slight dilution to create an especially refreshing warm-weather drink.

Ease of Making: Easy, amend quantities as needed.

Glass Type: Tumbler, Colins Glass, High Ball.

Taste: Refreshing, bittersweet.

Recipe:

  • 25ml Great Bustard Gin
  • 25ml Campari
  • 75ml Grapefruit Juice
  • 12ml Lemon Juice
  • 12ml Simple Syrup
  • Club Soda to top up
  • Hand full of ice

Method:

  • Add gin, Campari, juices and simple sugar syrup into a shaker.
  • Add a handful of ice to the shaker and close the lid.
  • Shake for 15 seconds until chilled and then strain into your glass.
  • Add ice to the glass and garnish with Orange, Grapefruit or Rosemary.

Variations:

  • Use the new Fever Tree Blood Orange Soda.
  • Replace Grapefruit Juice with Pineapple Juice.
