Deep purple, intensely aromatic and naturally sharp, they have the concentration and acidity needed to make a great cassis. We use 600g of whole blackcurrants for every litre we produce, making the fruit centre stage.\u003c\/p\u003e\n\u003cp\u003eThe berries are slowly macerated in spirit, drawing out their remarkable colour, fragrance and rich character. We then add sugar to balance their natural acidity while retaining the freshness and gentle tartness that makes blackcurrants so distinctive.\u003c\/p\u003e\n\u003cp\u003eWe have kept the recipe deliberately simple. There are no additional flavours competing with the fruit.
